So many of us, big city people, are so privileged yet have an unhealthy diet. We are so disconnected from our roots, from nature and from each other. With no time or passion to grow food, we let the food industry set the standards, which are low. “Normal” food is not organic and is lower in antioxidants. I seriously hope for laws that better protect the land, the animals’ welfare and ultimately our own health.
What I can do as a restaurateur is trying my best to source organic products, free range local meat, DOP labelled italian cheese and biodynamic wine; preparing meals with fresh products and healthy methods. No freezer, no deep fryer.
